Mini Apple Tarts with Sorrel Microgreens
INGREDIENTS:
- 1 puff pastry sheet, cut into 6 pieces
- ½ cup ricotta cheese
- 1 tsp honey or maple syrup
- 1 tsp vanilla bean paste
- ⅛ tsp each; ground cinnamon, ground nutmeg
- 1 apple, cored and sliced thin
- 1 lemon, juiced
- Raw sugar
- 1 handful of sorrel microgreens
INTRUCTIONS:
- Preheat oven to 200°C
- Place pastry on a baking tray and use a fork to poke some holes.
- In a small bowl, mix ricotta, vanilla, honey & spices.
- Add 1 Tbsp into the center of each pastry and flatten slightly (but don't spread out too much).
- Top with 2-4 slices of apple.
- Brush apple with melted butter and a sprinkle of raw sugar.
- Bake for 18-20 mins or until pastry is golden.
- Let cool and finish with sorrel microgreens.
