RECIPE: Mini Caprese Salad with Basil Microgreens

Fresh, vibrant, and bursting with flavour; this Mini Caprese Salad with Basil Microgreens is a bite-sized twist on a timeless classic.

Perfect for summer entertaining or a quick, nourishing snack, it brings together juicy tomatoes, creamy mozzarella, and the fragrant freshness of homegrown basil microgreens.

We’re extra excited about this one, as basil microgreen seeds are new to our range and mark our very first micro-herb!

Simple to make and beautiful to serve, it’s proof that the best dishes are often the simplest — especially when they start with something fresh from your micropod. 

INGREDIENTS:

  • 1 ball fresh mozzerella, sliced, then quartered
  • ½ punnet of cherry tomatoes, sliced
  • 1 Tbsp garlic infused Olive OIl
  • Sea Salt flakes, freshly ground pepper to taste
  • 1 handful basil microgreens
  • Drizzle of balsamic glaze to finish (optional)

INSTRUCTIONS:

  • Prepare all your ingredients.
  • Layer the cherry tomato slices and quartered mozzerella slices alternately on a plate, slightly overlapped on the edges
  • Drizzle with the olive oil and optional balsamic glaze
  • Flavour with flakey sea salt and freshly ground pepper, to taste
  • Sprinkle on Basil microgreens - as many or as little you like as per your flavour preference!
